Cast iron cookware has been popular for over a hundred years, often being handed down from one generation to the next. It is heavy and dense which allows it to absorb the heat, distribute it evenly, and cool down slowly. Once properly seasoned, cast iron cookware has the ultimate non-stick finish that will not scratch, peel, or wear off. It is without question, the most econimical cookware you can find.

Although used for all kinds of cooking, cast iron cookware fans will use only cast iron for frying and baking. They say that fried chicken and corn bread taste better when made with cast iron.

These days, cast iron cookware often comes pre-seasoned. You'll want to check to make sure your new cookware is seasoned prior to the first use. If it is not already seasoned, don't worry, it is not hard to do. Simply wash the cookware in warm water and dry with a towel. Then apply a thin coat of vegetable oil and "cook" it in the oven at 350 degrees for an hour. At that point, turn the oven off and allow the cookware to cool along with the oven.
