Fondue was once used to prepare everyday meals because of its simple ingredients of cheese and wine. The fondue pot would sit over a small heat source which allows the cheese to be kept in a liquid, or melted, state - the word fondue comes from the French "fondre"; meaning to melt. Bit size pieces of breads, fruits, and vegetables were then used to dip the cheese from the pot to be eaten (dippers).

Today, fondue is used to serve everything from appetizers to dessert. Cheese and chocolate are the two most popular fondue dishes. Cheese is often used as an appetizer served with bread and fruit as dippers. Chocloate is perfect for dessert with dippers of marshmallows, fruits, and bite size bakery items.

But fondue can also be used to cook the entree as well. Both broth and deep-fat can be used to cook bite size pieces of meats and vegetables for the main dish. This requires the fondue temperture to be high enough to safely cook the meats.

Today, fondue pots are available from many of the manufacturers. How you plan to use the pot will have a large influence on which one would be best for you. Ceramic pots are great for cheese and chocolate fondues but stainless steel pots are a better choice for broth and oil-based fondues.
