A paella is a traditional dish from Spain. Cooked outdoors over an open fire, paella is a saffron & rice dish made with chicken, chorizo & seafood.
A paella pan is a lagre shallow flat pan with handles on either side used to cook the paella. Authentic paella pans do not have lids because for the most part, paella should be cooked uncovered.
Traditional paella pans are made from carbon steel and come in many sizes. The carbon steel responds quickly to temperture changes which makes them a great choice for use on either gas or electric stoves. The characteristics of the metal makes it important to coat the carbon steel pan with vegetable oil after each use to prevent the pan from rusting.
Stainless steel paella pans have the same attributes of the carbon steel without the worry of rusting. It is well worth the added expense because it has the glossy finish popular in kitchens today. It is especially rewarding for those who like to display their cookware.
Enameled paella pans are made of either carbon steel or stainless steel and then covered with enamel. In addition to preventing rust, the enamel also makes the pan easier to clean.
