Mango Chicken Salad

1 package Original Chicken Short Cuts
2 tablespoons lime juice, divided
1 teaspoon cumin
2 avocados, peeled and diced
2 mangos, peeled and diced
2 cucumber, seeded and diced
1 14 oz can sweet corn
1/3 cup vegetable oil
1 cup cilantro leaves
2 green onion
2 tablespoons white wine vinegar
Salt and pepper
Combine 1 tablespoon lime juice and cumin; add chicken and toss to coat. Combine avocados, mangos, cucumber, corn, and 1 tablespoon lime juice. Mix chicken with mango and avocado mixture. Puree the next 4 ingredients. Season with salt & pepper. Pour cilantro vinaigrette over chicken. Serve at room temperature.
